  1. It's 2 1/2 of handfulls of dry or fresh pasta (I usually use penne).
  2. It's 3 of rashers of smoked bacon.
  3. It's 1/2 of onion.
  4. You need 1/2 box of (about 8) closed cup OR chestnut mushrooms.
  5. You need 2 clove of fresh garlic OR 1 heaped tsp of garlic puree.
  6. Prepare 170 of 200ml heavy/double cream.
  7. It's 1 pinch of cracked black pepper.
  8. It's 1/2 of fresh red chili OR 1 heaped tsp dried chili flakes.
  9. Prepare 1 pinch of fresh OR dried mixed herbs.
  10. You need 1 of chicken stock cube.
  11. You need 1 of garlic bread to serve.
  12. Prepare 1 of oil to fry with.

  1. following manufacturers instructions, pre-heat oven for garlic bread.
  2. in kettle, boil enough water to cover pasta.
  3. wash and slice mushrooms.
  4. roughly chop up bacon, onion, chili and garlic.
  5. add garlic bread to pre-heated oven.
  6. put pasta in a pot and cover with boiled water from kettle, re-boil and reduce heat to simmer.
  7. heat oil in a pan to medium/high heat, add mushrooms, onion, bacon, chili and garlic, fry until bacon is cooked.
  8. add cracked black pepper and mixed herbs to pan, fry for a further minute.
  9. add cream to pan, reduce heat to low/medium. stirring when needed to prevent cream from forming a skin.
  10. after a further 2 or so minutes, add the stock cube to the pan and continue cooking and stirring until the pasta is ready.
  11. when pasta is cooked, drain and add to pan with carbonara sauce, mixing thoroughly, serve immediately with garlic bread (and grated cheese in desired).
